María Nieves
Tantalean
María Nieves Tantalean Fernández is a 45-years old, She
is a coffee farmer that lives in La Coipa town, she has 3
farms which are in the mountains at a distance of 800
meters from her home, going up to the mountain; she
works with her husband harvesting only the ripe
cherries and then she washes the cherries and performs
the overflow to remove the dry or green cherries that
fall into the basket during the harvest by hand, after
washing them She proceeds to put them in the barrels
to carry out his first fermentation in cherry, after 120 hrs
She pulps without water and she ferments again for 72
hours in a closed place and out of the reach of light until
the time has elapsed, then she proceeds to wash the
fermented coffee 3 times to ensure that there is no
presence of mucilage. She then does the coffee can rest
for an hour and proceeds to take it to the solar dryer
(under shadow) where after 10 to 15 days in the
afternoon she proceeds to collect the coffee, making
sure that it has a moisture range of 10 to 11%
