Ecuador Arriba Superior Selecto cocoa beans offer rich dark roasted chocolate notes with subtle nutty, fruity, floral flavors with hints of jasmine undertones. Ecuador is home to some of the highest quality cocoa beans in the world, with Arriba cocoa considered one of the finest categories available. Attention to detail during the fermenting and processing stages of drying cocoa beans is what gives them their distinct flavor. Manabí, Los Rios, and Guayas regions produce 80% of Ecuador’s cocoa production. A combination of mineral rich volcanic soil and warm climate is an ideal environment for growing flavorful cocoa beans. The classification of Ecuadorean cacao was developed to indicate quality in terms of degree of fermentation, size, weight and percentage of defects. The abbreviation A.S.S.S stands for: Arriba Superior Summer Selecto. Arriba refers to the area grown in the upriver of the Guayas river, in the provinces of Guayas, Bolívar, Cotopaxi and Los Ríos.
